To ensure that the Mallorcan tomatoes do not lose any of their wonderfully aromatic taste, the natural sea salt mixture is produced exclusively at the time of the tomato harvest and is therefore only available in strictly limited quantities.

Flor de Sal d’Es Trenc Tomato is a combination of three traditional Mallorcan ingredients: Tomato de ramallet (hanging tomato), hinojo marino (“sea fennel”), and Flor de Sal d’Es Trenc Natural.

The tomato de ramallet, a popular local tomato variety, contains less water than other tomatoes and is picked before it is fully ripe.

Traditionally bound in bunches that are hung in a cool, dark, well-ventilated place to complete the ripening process, they are popular as an ingredient in Mallorcan snack pamboli – bread grated with tomatoes and drizzled with olive oil. Hinojo marino (Rithmum maritimum), a fragile plant that normally grows on the seashore of the Balearic Islands, is very rare and highly esteemed.

Its fleshy leaves are traditionally preserved in vinegar and salt to preserve its distinctive aromatic structure. In this traditional combination, Flor de Sal d’es Trenc Tomato brings the taste of Mallorca to any dish – try it with pamboli (tomato bread with oil and salt) or trempó (a summer salad of tomatoes, peppers, and onions).
